The Bikini Cocktail
Makes enough for 10 servings
For the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Drink (yields 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
Making the Syrup: Put the listed items into a pan, heat until it reaches a light boil, mixing so the sugar melts. After that, take off the burner and let it to cool down entirely. Pour into a sealable bottle, seal keeping it chilled, it will last for about one month.
To make Batch Mix: Mix all the liquids into one big jug, leave to sit for 60 minutes, then pass it through best through a fine cloth, so it's fully clarified.
For serving: Measure 85ml from the cocktail base to a mixing glass packed with ice, gently stirring gently for one minute to chill. Pour into a cold coupe glass or equivalent, decorate with some cranberries and complete it with a brief mist with the mandarin essence over the drink.
